Celiac Disease Diet
It is important to follow a healthy diet if you have celiac sprue.
Gluten Free Diet
A gluten-free diet is necessary for people with celiac sprue. Gluten is a chemical normally present in most breads and many other grain products. Always read food labels to avoid hidden sources of gluten.
Foods likely to contain gluten include:
- Distilled vinegar
- Modified food starch
- Plant protein
- Soy sauce
- Vegetable protein
- Graham flour
Corn and rice flour can be used as substitutes for conventional flour. Some restriction of dairy products may be required if a lactose deficiency is present. Vitamin and mineral supplements such as vitamin B12 and folate may be necessary in some cases.
